OK, let's get this straight. Cooking for one SUCKS. I just can't do it. I only know how to make enough food for the whole neighborhood to stop by. So, now that the entire rest of the family is out of the country... I'm trying my best to make micro-portions! Tonight was fish tacos: blackened mahi-mahi with a guacamole/salsa made from avocado, yellow beefsteak tomatoes, cilantro, vidalia onion, jalapenos and lots of lime juice. And some IPA beers... I bought a teeny portion of fish and there's still a ton leftover!
