Two bottles of wine. One goes in the Le Creuset after the chuck has been seared and the aromatics (onions, garlic, thyme, rosemary, carrots and mushrooms) have been browned as well. Braise in the oven at 350 until that previously inedible cut of meat has been rendered fall-apart tender. Serve the other bottle of wine as the pairing. This Cousiño Macul was found at my local Publix for $7, which made it right for both purposes.
