I present, the "Ecology of Food"... Otherwise known as "I made too much rice" ;)
Monday was fajitas with rice and corn (mixed together) and a cilantro mayo sauce that I made too much of as well. Lunch Tuesday was the leftover skirt steak on a ciabatta with the cilantro mayo.
Tuesday night was the same rice with some added diced sweet onion and sweet red pepper. I made some chicken cutlets because I knew they'd go well with that cilantro mayo as well.
Lunch Wednesday was the chicken cutlets in a sandwich. Is ANYTHING better than a chicken cutlet sandwich with lemon and mayo?
