With gas and grocery prices through the roof, I'm on a quest to feed everyone this week for $100. I needed to come up with some dishes that stretch out the protein... Like Chilaquiles, for example. My son's a big fan of this Mexican dish.
Who doesn't have leftover chicken? And tortillas are cheap and available, just cut them and fry them, then build it like you were making a Mexican lasagna...
I then covered it in some Monterey Jack, slices of onions and baked it - foil on, so it doesn't dry out.
Looks like they LIKED it!
