Monday night was a delightful one as our friends Manny & Madeline came on over for dinner. Not only are they so much fun to be around - just great people - but they like the food too!
The first course was a very light take on lasagna; meatless, with a pesto ricotta, sun-dried tomatoes and a fresh marinara (made with San Marzano tomatoes, of course!). Secondo was a chicken piccata made with pork instead of chicken (because pork is ALWAYS better than chicken!).
Here it is again: macaroons soaked in dark rum, topped with Breyers Lactaid-Free Vanilla ice cream, fresh pineapple and fresh mint. We followed this up with cigars on the porch. With a Monday this good, it's going to be a heck of a week!
