Yeah, I know... Chicken Marsala is so overdone that even the folks at Olive Garden in their quest to serve institutionalized Italian prison food have wondered about taking it off the menu...but it's a crowd pleaser. My crowd includes 3 kids between 3 and 13, so every so often you're gonna find a dish like this.
I served it with some long grain Italian rice that I cooked in chicken stock and a puree of roasted red peppers. Plated it with some Parmesan and fresh parsley on top. I think I liked that as much as the chicken! Wine was a Tommasi Valpolicella.
Dessert was strawberries with special aged balsamic from the nicest people on the planet at Salumeria Italiana in Boston's North End. Order a bottle of their Rubio Aged Balsamic and you'll lose your mind.
