During a very full week of work and Continuing Education credits, my respite was the newest copy of Food and Wine and all the Spanish-themed meals therein. We visited Spain a few years ago and had a monster of a meal in Toledo. I will never forget the carpaccio of venison with the black olive tapanade. I am sure I have a picture of that somewhere. Although it is not Spanish, there is an Argentine Market in Miami called "La Estancia" that I think is the best one in the Northern Hemisphere. Lunch was something from there that we used to eat in Argentina all the time called "matambre". It comes from the 2 spanish words that mean to kill hunger (matar hambre) and it is rolled pork with egg, carrots, spices, and who knows what else! Try that with some Mostaza Savora (a type of Argentine mustard) on a fresh baguette!
