Thanks to the cumulative memory and organizational capacity of my sister, this breakfast treat that our late mother used to prepare has not been lost to the clutter of life. Here's the recipe. It is DECEPTIVELY simple. Don't try to enhance it or change it. Just ENJOY it...
"Pancake Non Pareill"Ingredients:
1/2 cup butter, 1/2 cup flour, 1/2 cup milk, 2 eggs, pinch of nutmeg, 2 tbsp. confectioner's sugar, juice of 1/2 lemon, apricot jam
Procedure:
Mix together flour, eggs, milk and nutmeg, leaving batter a little lumpy.
Melt butter in a large, ovenproof pan.
When butter is hot but not burnt, pour the batter into the hot butter and reurn to oven.
Bake at 425 degrees until golden brown (15-20 minutes or so).
Sprinkle with confectioner's sugar and return briefly to oven.
Then sprinkle with juice of 1/2 lemon, spread with jam (apricot is superb, also raspberry) and serve at once.
Serves 4.
