Since her lamb ragu recipe (see post HERE) was such a hit, I went back over to the "Ciao Italia" site to see if Mary Ann Esposito had any other interesting pasta recipes. One caught my eye immediately, named "Emilio's Angel Hair Pasta".
True to form, Mary Ann has another winner! The concept is a meatless sauce made in austere times. That's right up my alley, and it has all kinds of flavors I love: anchovies, oil cured black olives, capers... The recipe calls for jalapeƱos, but I substituted the Peperoncini Piccanti that I had bought to make the lamb ragu. I also wondered out loud if chopped sun-dried tomatoes would not be a welcome additon as well.... ahhhhhh, so much pasta, so little time! Enjoy!
My kind of pasta, no meat and strong flavors! It seems really good, must try it.
