My wife and I work really long days. It's the nature of our industry and it's the nature of the economy and having so many mouths to feed! What I love about being a home cook is that no matter how busy your day, you must take a mandatory break to create a dinner. For me, that break is so refreshing. Tonight was Pork Loin stuffed with Prosciutto Picante, fresh basil, sundried tomatoes, Pecorino Romano and breadcrumbs. First seared, then finished in tomato sauce in the oven...
Tasty stuff! And a nice little break before getting back to all this work I brought home!
