And already in the memory banks - some nice food from the Holiday Break.
Christmas Eve Lasagna with chicken and bechamel. Bechamel made with Lactaid milk, no less! (And no one was the wiser)
Christmas day artichokes, getting ready to steam away...
Our Prime Rib in it's "before" - crusted with rosemary, garlic and sea-salt.
And here resting, in it's "after". Medium rare and just STUPID good.
Day after Christmas, it was time for something "lighter". Here are the aromatics looking all Holiday-like as they start to sweat and transform into...
Fish and shrimp curry soup with coconut milk and fresh basil. Great stuff. Happy 2012 Everyone!
A few different cocehis First budget helper is to remember that your thing doesn't have to feed everyone in attendance, so don't worry about providing massive quantities. Not everyone will choose your thing, and people don't take meal sized portions either. They nibble. A family sized portion of a dish from you, added to everyone else's will be fine. I always forget this!OK some good cocehis.Drinks: can of coffee, canister of lemonade mix, box of family sized tea bags. Jar of creamer, bag of sugar, sweetner packets. Any or all.You can prepare a cake or a pan of brownies. Baby carrots, bag of salad, apples, a watermelon, or something else light and healthy. People sitting around eating donated food for days will appreciate it.If you are taking food to the home, some easy prep things might be good: A roll of cookie dough or some mac and cheeses, a box of cereal, a gallon of milk, a gallon of ice cream. You can also bring household things if there are houseguests staying with the family paper plates, napkins, toilet paper, cleaning wipes, a yahtzee game or deck of cards or a kid's DVD anything to help with the overflow of people in the house.
